Our Fish

Between the Delphic landscape
& the Corinthian seascape

Below the ancient site of Delphi and around the naturally sheltered harbour of the Corinthian Gulf, we raise our fish in ideal growing conditions. Whether a product of conventional or organic farming, our fish are high in protein content, omega-3 fats and unsaturated fats, and low in sodium/salt. The above are results from laboratory composition analyses, performed on our fish on a regular basis.

Morphology: Its body has an elongated shape, quite compressed, slender, like all fast fish. Its head is of a typical predator and its eyes are lively and kinetic. Its mouth is wide, armed with teeth. On its back there is a first fin supported by thorny rays, while the second fin is soft but strong. The caudal fin is almost bilobed with a concave tip. Its body is covered with glossy, silver scales – white on the belly – while the spine is grey and sometimes very dark. It is a species that can survive and grow in a wide range of temperature and salinity.

Physical presence: Mainly Mediterranean Sea (endemic species), Black Sea and northeastern Atlantic Ocean.

Morphology: Its body is laterally compressed and its head sharply tilted. Its colour is silver with a large black spot at the beginning of its lateral line on the gill cover below which (usually and depending on nutrition) there is an orange area. Above its eyes is an intense golden bow like an eyebrow (hence the synonym of “goldeyebrow” or “chrysafrida” in Greek). It is a protandric hermaphrodite species (they are all male and subsequently become female).

Physical presence: Mainly Mediterranean sea (endemic species) and southern European coast in the Atlantic Ocean.

It has a variety of colours, depending on the size, with the adults being silver-coloured on the front and olivaceous on the back – with sides that vary from whitish to golden shades. The first dorsal fin consists of seven rays, while the second is unusually large, and the fins overall, have a yellowish-oily colour. It has small teeth.

Physical presence: Global. Common species in the Mediterranean Sea.
